Su Yan-Chu was startled by the voice, his heart inexplicably skipped a beat. He glanced sideways at the expressionless Shen Muhan, who had already stood up. A thought crossed his mind: could this guy also be interested in doing business here and had his eyes on Miss Xia's skills? That wouldn't do. He immediately defended, "She's just—"

She was very meticulous in making the Scallion Pancakes. First, she kneaded the dough with warm water, then chopped fresh Scallions finely and set them aside. After that, she poured hot oil into the bowl with the Scallions to make scallion oil. She then cut the kneaded dough into small pieces, flattened them, and rolled them into large thin sheets. She spread the cooled scallion oil evenly over the surface, sprinkled some chopped Scallions on top, and added a little prepared Sichuan Pepper Salt.
Finally, she made two cuts on each side of the pancake without cutting through, folded it into a square shape, and rolled it thin.
Seeing that the pan was heated up, she brushed a layer of oil inside. Once the oil was hot, she placed the pancake in. After one side was formed, she flipped it until both sides were golden brown before taking it out. Since she had cut the dough small, the pancakes turned out just about palm-sized, and through the golden surface, one could see the Scallions on both sides.
She made quite a few of them—over forty in total. Seeing that everyone in the kitchen was drooling with hunger and standing at the door without moving, she let them all have a taste, and they all praised her work.
She packed up the remaining twenty or so pancakes to take home for her family to enjoy.
